Faro, a Bushwick mainstay for fresh pasta and seasonal produce, is closing after eight years serving the neighborhood from its Jefferson Street location.
“It’s been an amazing journey and, after almost eight years, the time has come to close the doors at Faro. We are proud to have been part of the Bushwick community and will remain forever grateful for the time we were open, and for everyone who has shown us support,” the restaurant said in a post on Instagram. “March 26th, 2023 will be our last service. We hope to see all of you for one last bowl of pasta! Thanks again for all the love.”
Faro opened its doors at 436 Jefferson Street in 2015, adding to the offerings of the increasingly trendy Bushwick food scene. Headed by chef Kevin Adey and his wife, Debbie Adey, Faro quickly became well-known for its handmade pasta and wood-burning oven, and its focus on heirloom grain and seasonal, local produce.
The typical Bushwick warehouse space was formerly sculpture storage for MoMa, Eater wrote in a 2015 review. The dining room is large, with a high ceiling, exposed brick, and an open kitchen.
During the pandemic, the restaurant put together and sold pasta kits and bottles of wine and pre-batched cocktails for restaurant withdrawal diners, and it resumed full service as the city opened up.
On Instagram, the restaurant thanked everyone who ever worked at Faro, saying without love “the dream will never come true.”
“This space was filled with a love that was second to none. I’ve never had such a soul nourishing job and my near 30 years of professional cooking and never felt like I was going to work when I was walking in. Thank you all from the bottom of our hearts,” the caption reads.
Faro’s last service will be on March 26, according to Instagram.
Another restaurant, Nowon Bushwick, a spinoff of East Village Korean gastropub Nowon, is already scheduled to take its place. A poster taped to Faro’s front window says Yupjib LLC is applying for a liquor license for the building. The name is connected with chef and Nowon owner Jae Lee, who recently teased on Instagram about his Bushwick plans.
Faro’s Kevin Adey was previously chef at Northeast Kingdom around the corner, an under-the-radar farm-to-table restaurant that closed in 2016 and spawned many eateries in the neighborhood and helped establish Bushwick as a creative hub and dining destination.
